Who loves coconut? I'm pretty sure a lot of people do, especially with dessert! For these cupcakes they are a bit denser and you can easily use food colouring to make these cupcakes any colour you want. For a specific project that I did, I used green food colouring, to make it look like grass, as the coconut adds some needed texture. It also works well for clouds if you colour the coconut, with blue food colouring. It can also resemble a shaggy dog if you desire that look, and all you have to do is add sugar based eyes that you can find at most baking stores. the coconut cream cheese frosting also adds a nice quality to the texture of the frosting, and allows the coconut to stick to the cupcake. This recipe makes about 12 mini cupcakes and 12 large cupcakes. Overall, this recipe turned really well, and is great for making a cupcake display :)
