Check out these super delicious Mint Chocolate Cupcakes with Mint Buttercream Frosting! These come in both small and large sizes, and taste amazing in both formats! These cupcakes were a blast to make because of how easy they were to make, making them even more satisfying to bake! I loved the frosting recipe for this recipe, as it was so easy to make it a mint colour. The chocolate chips also added to the mint chocolate chip flavour and concept. For the frosting I only had to use a few drops of green food colouring to tint it the perfect mint green. These cupcakes were also super moist and chocolatey :) It makes about 12 large cupcakes and 12 mini cupcakes, so if about 16-18 large cupcakes or 28-32 mini cupcakes, depending on how much you fill each cupcake tin. Since these were chocolate cupcakes I decided to use white paper tins, since its chocolate it wouldn't be able to seen otherwise, and also prevents the pan from being tinted from the wrapper. Anyways, you can also play around with the fixings, and add a chocolate fudge drizzle on top, or core out the middle and have a fudge filling.
