Mini Pumpkin Tarts!


Happy Thanksgiving! Or Canadian Thanksgiving should I say? Check out these super delicious Mini Pumpkin Tarts and the awesome recipe that has become a classic in my family's household! This recipe is great for both making pumpkin pie and pumpkin tarts. It also makes either 1 pie and 6 mini tarts or 20-24 mini tarts. As for the pie crust you can either make your own or you can buy a pie shell. Personally, I prefer making my own pie crust but it's also really nice to buy a pie shell when in a pinch since it's so convenient, and most packages come with two shells, so you can always freeze one for later. For another pie option such as blueberry, apple, strawberry, pecan, chocolate, or sweet potato, or you could also make a savoury pie like chicken pot pie, or even better you can save it for when you make a pumpkin pie for Christmas! Really, there is no bad time to make a pie, because everyone loves pie and they are so versatile. As for the mini tarts, I generally buy two packages that have 12 each, so that I can make two dozen mini tarts, as they are a cute alternative if you don't feel like slicing individual pieces for everyone. The cooking time will vary because of this, however, I would stick the general time recommended in the recipe, but check on it after the second round of 10min. To make the pie or tarts fancier you can always add either homemade or store bought whipped cream, depending on your time and/or preference, shaved cinnamon on top, or even sprinkle confectioner's sugar on top. No matter what method you try I guarantee that you'll love this recipe, oh and I almost forgot my secret to making this recipe extra special, freshly grated ginger! Yup, you heard me right, by grating your ginger right before you add it in to the mixture, you'll add a little bit of a zing that otherwise would've been lost with just powdered ginger!
