Merry Christmas! I hope that you all have a great Christmas! To celebrate I've added one of the new recipes I tested out this year to add to my baking repertoire for Christmas baking, haha :) Anyways, now on to the review! So I found this recipe to be absolutely delicious, at least that's what everyone keeps telling me. One tip I found very helpful provided in the recipe is to wait until the edges become a light brown colour, as you wouldn't be able to tell otherwise. Also, the frosting I ended up using 1cup of powdered sugar and adding about an extra tablespoon or so, to achieve the right consistency. For the candy cane frosting I used a vitamix blende, but if I were to do this next time I would definitely try putting candy canes in a ziplock bag and then using a rolling pin to crush them instead, and then using a sifter to get rid of the candy cane dust. All of this would make an amazing cookie even better, mainly for presentation reasons. For the icing, I could have made it a bit thinner, so that it would spread easier, but I wanted to make sure it wouldn't just melt off as well. Overall, this cookie turned out extremely well and they really do melt away and are a very refreshing dessert!
