Gingerbread Cupcakes!

Anyone still wanting more gingerbread flavoured desserts? If so, you've come to the right place, as I have the recipe just for you! GINGERBREAD CUPCAKES!!! Yes, that's right, gingerbread is still cool at the end of January, don't be so judgy it's delicious regardless and with the cold weather it's the perfect dessert to make you smile :) My favourite cupcake recipes are always from the cookbook "The Cupcake Diaries" and the other book from the Georgetown Cupcakes sisters, as they always turn out amazing! Everyone loves them! I've used so many recipes in each of the cookbooks and they haven't failed once, definitely a keeper if you love to bake especially with cupcake recipes! With this recipe they also had the extra option of making Cinnamon Cream Cheese Frosting but unfortunately I ran out of time to make some, but their frosting recipes also work out extremely well with the perfect portion sizes! As for the sizes of the cupcakes I made both mini cupcakes and regular sized cupcakes approximately 24 mini cupcakes and about 17 regular cupcakes! Which is extremely generous for a cupcake recipe :) Sometimes I make recipes and end up with only about 6 regular sized cupcakes, which are good for small groups of people or just your family, but when you have a party to go to you kind of expect a larger turn out. For this recipe, I used my Kitchenaid mixer once again and I used cupcake tins Christmas themed,as I made them during that time, which were really cute! The cupcakes turned out super moist and delicious and fluffy, a must for all cupcake, gingerbread, dessert, and/or Christmas lovers! They last approximately 3-5 days and I stored them in a plastic container. For the best results though, I would serve them within the first 2 days. For the icing, if you do end up making it I would definitely scale down the proportion of icing sugar used in the recipe by using about 1/2 to 3/4 of the amount recommended, using a Kitchenaid or some kind of mixer, as well as using a piping bag with a round tip. Try icing the cupcakes by making a circular motion with the piping bag on top of the cupcake, and apply an even amount of pressure, as well as using both hands to pipe the icing on top of the cupcake. Put one hand above the icing tip and the other hand near the top of the icing bag and make sure to not let the icing overflow onto your hand, trust me I've done that enough times to tell you that it's a huge clean up process, sticky, and not very fun to deal with during or afterwards :) Overall, this recipe turned out very well, and is a beloved recipe by many :)
