Who loves Cheesecake? Pretty much everyone! But look what I've brought you! Today, I've brought a healthier version of a cheesecake that I made for my mom's birthday, and our entire family loved it! It's made with a delicious cashew cream and a date and almond crust, making the entire cheesecake amazing! Even my dad, who isn't a huge fan of anything healthy, loved this variation of a cheesecake because it was that good and was really light and fluffy. This recipe made 2 mini cheesecakes where I used mini springform pans. For the berry layer, I used blueberries but you can also use raspberries or strawberries depending on your favourite berry flavours. For freezer time, i would recommend putting the springform pan into a container to make sure nothing falls on top of the cheesecake the freezer. Overall, this cheesecake is super delicious and I would definitely recommend giving it a try and I would make it again for all special occasions!
