Chocolate Raisin Pockets!

Today I decided to make these super cute Chocolate Raisin Pocket Cookies! They are absolutely delicious and even give you a bit of zest with each bite from the orange zest in the filling. One of my favourite parts about this recipe is how it's a) a new recipe (I love trying new recipes!) b) easy to make and clean to eat. As I know it's a bit of problem sometimes when eating cookies that they can get crumbs all over the place or there's a bit of an uneven amount of fixings in some parts of the cookie and less in others. With this recipe, however, that won't be the case as you can easily equally distribute each cookie/pocket with as much or as little filling as you want! As for how many cookies this recipe makes, it makes approximately 36-40 cookies/pockets (assuming you sandwich or make each cookie into a pocket). As for tips on the recipe the only advice that you really need is to make sure to a) sprinkle a bit of sugar on top of each cookie before putting them in the oven b) using a fork or your fingers to pack the pocket's filling c) account for how much filling you have and will need for each cookie and d)8oz. of cream cheese is one package of Philadelphia cream cheese (to help save you some time experimenting like I did :) Overall, this recipe turned out great and I would definitely make it again and maybe even try different fillings. Oh also I did using all chocolate chips for some of the cookies as I filled some of the cookies from the first batch with more filling than I should have given the amount of dough I had leftover and decided to make my own filling instead (worked out pretty good!).
