Who loves oatmeal raisin cookies? Well, you're in luck since today that's exactly what I'm doing a review on. This mini oatmeal raisin cookie recipe is super cute and perfectly sized for a snack and sweet treat. This recipe makes approximately 40-45 mini cookies, as for refrigeration it should be in the fridge for minimum 1hr but can be refrigerated for up to a day. As for raisin preference, it really depends on what you like, however, I used Sultana Raisins for this particular recipe. As for size, I rolled them into mini balls approximately 1.5-2tbsps. I was able to put approx. 15 mini cookies per baking sheet. You could also mix it up and use mini chocolate chips or dried cranberries with mini white chocolate chips if you like. You could also make jumbo cookies or regular sized cookies depending on your preference. It really depends on my mood, since personally if I'm in a rush I make larger cookies as it takes way less time to monitor the batches, as I ended up having to make 3 trays of mini cookies. Overall, this recipe was pretty good, however, I found the previous oatmeal raisin cookie recipe I made to be a much softer and squishier cookie so I'd go with that one if you have a choice between the two. Although, if you want the cookies to last longer and want more cookies than this is the recipe for you. Happy Baking!
