Today I decided to make something extra special and extravagant just for fun: Chocolate Raspberry Cake with Raspberry Buttercream Frosting. For the cake I didn't make too many alterations but I did make my own buttermilk by mixing together 1tbsp of lemon juice and 1 cup of milk since I didn't have any in the house today. As for making the black coffee I used 1 cup of hot water and 2tbsp of instant coffee mix, I know I know it's not freshly grounded coffee but it's what I had on hand especially since I'm not really a coffee drinker. As for slicing the cake into layers I used dental floss. I know it sounds really strange but I saw a life hack online and it surprisingly worked out so well. All you do is line up the dental floss of where you want to slice the cake and then you pull the dental floss across until it's completely cut through. I did this to cut it both in half and to slice off the top of the cake to make it nice and smooth for icing the cake. As for the frosting the only real alteration I made was using fresh raspberries and then squishing them with a fork on a plate to make a fresh "jam". The best part about this was that I didn't need to use pink food colouring because of the strong colour of the raspberries and it had an authentic feel with all of the raspberry bits and pieces in the frosting which was really pretty, at least I think so. Then I had some extra time, so I decided to melt 1 cup of chocolate chips by double boiling it over the stove by bringing it to a boiling heat at level 6 and then bringing it down to a simmer and using a spatula to stir it around, which was probably too much but I didn't know what I was going to do with it at this point. After that I waited approx. 2-3hrs for the cake to cool and then I used a flat spatula to spread the frosting on to both the middle and top of the cake and around the sides. After that I used the melted chocolate to drizzle on top of the cake. After that I put raspberries on the perimeter of the cake and voila there you go!
