Today is a very special day, it's Chocolate Chip Raisin Roasted Almond Oatmeal Cookies Day!! Okay, so it's not an official day or anything like that but how many times can you actually say a sentence that long and it's all related to one dish? It's a blend of a ton of flavours that make the ultimate cookie! In fact, I made these for my dad's birthday, by combining all of his favourite elements and combining it into this recipe and swapping out some of the ingredients. For instance, I traded the dried cranberries for the raisins (I used sultana raisins because they're his favourite, but feel free to use whichever raisins you love or have on hand at home). I also used roasted unsalted almonds instead of roasted pecans simply because I didn't have any pecans on hand and my dad happens to love almonds. Since the kind I had were more for snacking on I used my Magic Bullet Blender to chop up the almonds into smaller pieces for the cookie. As for the chocolate chips I decided to use that instead of what the recipe called for which were chocolate chunks since I didn't have any really good chocolate on hand plus I like how chocolate chips melt in cookies once they are in the oven. I decided to make these cookies a bit smaller than I usually would as I bought my dad a biscuit pocket mug and wanted to make sure that the cookies would fit inside of the biscuit pocket (they did! by the way :)) and so I would recommend that if you make them smaller like I did to bake them for around 15-17min rather than 20-22min due to the overall density and surface area of the cookie (sorry that sounded way more scientific than I probably needed to be for cookies, even though there is a fair bit amount of science in baking haha). Overall, this cookie was delicious and my dad loved them and if you would like to see the other variation of this cookie check out my other review under "Cranberry and Oat Cookies" although even those ones were a bit of a deviation as I used chopped walnuts instead. I guess you could say I don't like to stick to the original recipe much but I like swapping for ingredients I have on hand or an ingredient that I know friends or family like better.
