Who loves lava cakes? Well, here's a different variation of the traditional chocolate lava cakes which I did in a previous post to add a citrus twist. I realize that this recipe is more suited for summer or spring, but I had some lemons in the fridge and white chocolate in the cupboard so I thought I'd give it a try, plus it looked like a lot of fun to make! As for alterations, rather than using butter to grease the pan I used margarine as I found the butter too hard and was difficult to spread. This worked out just as well and it allowed ease to removing the lemon lava cakes. As a side note, since this recipe calls for two lemons tested just as an FYI it takes about 1-1.5 squeezed lemons for 2tbsps of lemon juice as written in the recipe. Of course this also depends on the size of the lemons you use but overall there will be plenty of lemon juice abundant to use. As for flipping the lemon lava cakes over I would recommend using oven mitts and a baking tray. Also, it's super important to wait for them to cool as per the recipe beforehand, as well as using a knife around the edges before flipping it over. After flipping them over, I would recommend using a flat spatula of some sort to transfer the cakes to a plate. Overall, this recipe turned out really well and 15min is exactly the right time as discussed in the original recipe. Happy Baking!
