Cinnamon Palmiers!

Who loves cinnamon? Or palmiers for those who have tried this delicious pastry? Well, good news for those of you who do because they are absolutely delicious and turned out really well. I've always wanted to make these because they seemed really cool and I loved them as a kid. Generally, you can use store bought puff pastry but I thought I'd try something new and make my own. I have made my own puff pastry before but I also wanted to make sure the recipe worked out accurately since there were so many steps and I wasn't really sure which ones to skip if I used store bought puff pastry. The only modifications I would make would to press the palmers down with my palm more so that the puff pastry doesn't split apart like it did on a few of mine once they came out of the oven. It also took less time than expected but still fairly accurate. The nice part about this recipe is that once you make the puff pastry you can change the flavours easily by substituting chocolate, jams, etc. Overall, this recipe turned out fairly well and I would use it again but probably try a new flavour. Oh also this recipe tended to be fairly mild in sweetness so if you like it sweeter feel free to add more sugar or sprinkle confectioners sugar on top after they are done. Happy Baking! :)

Here is the link to the cookbook "Illustrated Step-By-Step Baking" by DK that I used with the recipe for the palmiers inside, it can be found at: Amazon.ca, Barnes & Noble, Chapters, and more.
