Merry Christmas! To celebrate I decided to post a classic Christmas cookie/dessert that I made this winter holiday. Who loves Christmas shortbread? Well, if you do then you'll love these delicious Mini Funfetti Shortbread Cookies also known as Funfetti Shortbread Bites! For this recipe, I didn't have round sprinkles that were red green and white, so instead I used a combination of red white and green sugar crystal sprinkles. I also only needed to use one long piece of parchment paper rather than 2, which was convenient. I ended up baking the bites for approximately 10min and they turned out really well. Remember that if you do use unsalted butter make sure to add 1tsp of salt, as the recipe calls for salted butter. To cut the shortbread into mini bites I used a regular knife and tried to divide it evenly in rows rather than cutting them into individual squares or rectangles. This recipes is also really great if you want only a bite or two of shortbread or for Christmas parties. The sprinkles are also interchangeable by being able to use different types of sprinkles based on the occasion such as orange and black for Halloween, pink purple yellow and blue for Easter, and so on.
