Today, I decided to mix it up and make Sunflower Seed Cookies! As I had a lot of sunflower seeds lying around the house and my dad suggested that I make something with them before they go bad as we had so many! But I didn't want to make any ordinary sunflower seed recipe i.e. muffins, trail mix, granola, granola bars. I was pleasantly surprised with this cookie recipe as it turned out really well and made quite a few cookies (32 cookies in total)! The dough was just perfect and was super easy to make! One of the few modifications that I would make is that while you are waiting for the first batch of cookies to bake in the oven that with the other dough you should but it in the fridge to cool, to make sure the butter doesn't melt too much. As this interferes with the result of the cookies once they bake in the oven. If you want to be efficient and save time you can pre-roll the cookies on to a plate or in to a container and then put it in the fridge so then when the batch of cookies in the oven are ready you can just put them on the tray and pop them in to the oven right away. Also, once you roll the cookies (about 1.5tbsp-2tbsp) flatten them onto the tray slightly with your palm to give it a nice shape. As for the coconut you can use either sweetened or unsweetened (I used sweetened as I didn't have any unsweetened left but it's really up to you :)). I also used unsalted butter for the dough and found that around 10-11min was the perfect timing on the second level tray of the oven. Thanks for reading and I hope you enjoyed this review!
