Healthy Carrot Cake!

This recipe was absolutely delicious! I couldn't believe it! I've been looking for a healthy carrot cake/bread for what seems like an eternity and yet here it is! And I swear its way better than this picture displays! It's soft, fluffy, moist, and sweet and everything you love about carrot cake that you would take a double take if I told you what it was made of, seriously!! I've been looking for a healthy alternative forever and I'm so glad that I found this recipe, so go check it out! For alterations, I did add the chopped walnuts and raisins to the recipe as I really like those additions in my carrot cake but feel free to leave it out if you're allergic or just don't like them in carrot cake. I made this in a square pan, however, you can also make this in a loaf pan which works just as well. If yo like it a bit sweeter you can look up a cashew cream cheese frosting or perhaps a coconut whipped cream if you're planning on staying on the healthy side. I didn't have any shredded carrots and only had mini baby carrots so I used my Vitamix to chop them up as I was feeling bit lazy and dint feel like grating them mainly and having to go to the store to buy full sized carrots. For the egg if you'd like to make this recipe vegan, feel free to make a flax egg with water and ground flax meal. I ended up making my own oat flour by blending it in the Vitamix, however, you can also buy it at your local health food store if you're short on time. This recipe was fairly accurate and took approximately 34-36min overall. All in all this recipe turned out really well and I hope you enjoyed this review! :)
