Today I decided to bake these amazing Healthy Oatmeal Raisin Cookies. They are gluten free, vegan, and have no refined sugar and they are super delicious too! I found this to be one of the most cookie tenure like healthy cookie I've made by far. You can also substitute the raisins for cacao nibs, coconut, or your other favourite fixings depending on your preferences. It was also super easy to make and took approximately 12min in the oven and made about 12 cookies. I did find that they were a bit on the sweet side so you can alter the recipe slightly if you'd like, depends on your preference. I did end up using coconut flour, however, you can use other flours such as oat flour etc. The cinnamon added a nice kick, and if you aren't vegan you can use a regular egg instead if you don't have any flax meal at home. Although, I would suggest that you give it a try and I promise you it doesn't take away from the texture by using a flax egg instead of a regular egg. For the coconut oil I melted it in the microwave for approximately 30seconds, make sure it doesn't get too hot as this will affect the cookie batter texture. As for the raisins I used Thompson raisins, but feel free to use your favourite variety such as Sultana raisins. Overall, this recipe turned out really well and I highly recommend that you give this cookie a try!
