Perfect Pumpkin Spice Snowballs!

Today I decided to make these delicious Pumpkin Spice Snowballs! Perfect for both fall and winter! Seeing as Christmas was coming up soon but it's not quite winter yet I decided to check out this amazing spin on my favourite squash: pumpkin, and one of my favourite cookies to bake: snowballs! This recipe turned out really well and I definitely recommend making this one at home. As for alterations to the recipe in terms of the baking time I would say that instead of the 7-8min requirement it was more like 9-11min for me. This recipe made about 38-40 snowballs, as I made them about 1tbsp to 1-1/2tbsp each. Since I didn't have any ginger at home I substituted it for 1/4 tsp of ground cloves instead. Typically, if I did use ginger I would grate it, as I find freshly grated ginger really brings out the flavour. As for cooling, I let it cool for 2-3min and then rolled it in icing sugar and let it cool on the cooling rack for about 20min. After that I was able to use one large container to fit all of the cookies and since they are slightly sticky I used a paper towel to separate the two layers of the cookies, so that the cookies wouldn't stick together and the icing sugar wouldn't come off. Also, for those of you wondering, icing sugar and confectioners sugar are the same thing just another name for it. I just thought I'd let you know, as I remember being super confused at the grocery stores a few years back as to which one it was! Anyways, I hope you enjoyed this review and be prepared for the upcoming recipes on Christmas baking to come, as I'm sure you're all prepared for seeing as there's been ads and flyers out everywhere since November 1st, which if you ask me is a bit crazy! But now it really does feel like it should be about Christmas season soon seeing as Remembrance Day has passed and for our American readers so has Thanksgiving!
