Hey everyone! Finally, I am back! It's funny, I was planning on being able to bake like 10x more than i usually do but i ended up making 3x less than normal because as soon as I got off for winter break I got the cold/flu for 8 days! It was awful but hey I caught up on a lot of Christmas classics and classic movies in general, so it was very educational in terms of movies since I just napped a lot haha. Anyways, so I'm finally all better and yesterday I decided to make these delicious Soft Iced Italian Sugar Cookies. Since I've never made them before and I like to make different types of cookies all of the time that are considered classics. This cookie recipe turned out pretty well but they ended up looking more like Easter cookies, since I wanted to make my feed look more colourful and picked purple, pink, and blue. However, I suppose now looking back that I should have made them green and red haha. Oh well, next time! These cookies taste like a mix between Russian Tea Cakes , Shortbread, and Standard Sugar Cookies. I eded up using 2 cups of icing sugar for the frosting, however, the recipe calls for 2 and half and that would work well too, it really depends on how sweet you like it and also how thick you want it to be. I think next time I would make it 2-1/2cups because I think it would make the glaze/frosting glossier and sweeter, as the main source of sugar is really from the frosting. As the cookies aren't very sweet and the frosting adds to the flavour. You can use any kind of food colouring, however, I used the gel food colouring, as you don't have to use as much and they bring out the colour a lot easier than the liquid version. You can also use any colour combinations you'd like and since eI didn't have large crystal rocks to put on top I used some sprinkles for half of them and none for the other, as I wasn't sure whether or not it would look good. They also dry really fast, so if you do use sprinkles do it fairly quickly after dipping the cookies in icing. The cookies took about 10min in the oven for the optimum time and it made exactly 36 cookies (3 dozen). Overall, these cookies turned out really well and I hope you love them as much as I do!
