Linzer Cookies with Blueberry Jam!

Merry Christmas everyone! Today I decided to bake these delicious Linzer Cookies with Blueberry Jam, a Christmas cookie classic! This recipe turned out pretty well, however, I would say that it was a bit sticky before i put it in the fridge, which concerned me a bit. Thankfully, the dough firmed up and was much better after the 1hr in the fridge. But make sure to roll it out quickly and limit the amount of times you need to re-roll the dough, as it does warm up really fast and near the last rolling out of the dough remains it gets significantly dryer. So I would recommend if you do run into this problem to add more flour if it's too wet and to add a bit of water to the dough or your hands if it's too dry. This also works for cracks in the dough, if you need it to stick together make sure to use a bit of water to smooth it over. I used a Kitchenaid mixer to make this recipe but you can also use a hand mixer or any other type of stand mixer. For the cookie cutters I used three types: a heart, a star, and a flower, all of which had a smaller version to create the window glass appearance. This recipe made a total of 12pairs or 24 cookies plus 12 mini cookies or 6 pairs/sandwiched cookies. Make sure to only make an equal amount of cookies that have a hole in the middle and the other half as plain cookies. That way you can fill the cookies with jam like a sandwich. You can use any type of jam that you like, typically people use raspberry but the raspberry jam that I had at home went bad, so I used blueberry jam instead. However, you could also use marmalade, or strawberry, or any jam that suits your fancy, whatever floats your boat as they say haha. The cookies ended up needing to be baked for 11min per batch and cooled for about 10-15min. Once cooled make sure to sprinkle/sift confectioners/icing sugar on top of the cookies with a hole in the middle and then spread jam on the bottom half and place the icing sugar covered cookie on top. Voila you have your very own delicious linzer cookie! I hope that you all enjoyed this recipe review and that you all have a very Merry Christmas!
