Today I decided to make Lebkuchen Cookies and boy was it a challenge! Once in a while you find a recipe that is way more difficult than you think it will be and this was definitely one of them. Looking at the recipe it seemed harmless enough but once it came out of the oven I knew something along the way had gone wrong. While yes, they turned out very picturesque they turned out very hard. I'm not quite sure if it was the recipe or if along the way there was a step that I should have done in a certain way but I will try to make Lebkuchen Cookies again in general, as I am determined to one day be able to make this recipe again and do it well. For the white chocolate coating I added coconut oil since I didn't have white chocolate melts, but I think if you want the best results I would use the melts. To sprinkle on top I used nutmeg but you could also use cinnamon if you prefer. During the process I had to add a bit of water to the dough to make it easier to roll out for the 3rd and 4th roll out of the dough. After talking to a friend who knew more about German desserts than I did, she instantly told me that German desserts while they taste delicious are also one of the most difficult types of desserts to make. She learned tis from both personal experience and from one of her friends who is German. So maybe it's not too unusual to mess up when making them, however, I would really like to know how to make them properly :) The dough itself wasn't that difficult to make it was more like it was difficult to get it right. Overall, this recipe was a bit challenging but it was fun to make it and at least they looked good, but how deceiving, am I right haha? Happy baking and I'll let you know how my next recipe goes :)
