Terry's Oatmeal Chocolate Chip Walnut Cookies!

Today I decided to share with you a review of a recipe from someone close to me, my neighbour, Terry's Oatmeal Chocolate Chip Walnut Cookies. If you read my previous post then you're all caught up and if you haven't check it out to learn a bit about who Terry is. Also, today is Terry's birthday and so to honour what would have been her 80th birthday, cheers to Terry! This recipe turned out really well and I decided to make them into palm sized cookies rather than teaspoon size cookies like the recipe recommended, as it would make 7 dozen at that size. However, at the larger size it made 27 cookies. I used walnuts as it said you could use any type of nuts, as I thought it would match the texture of the cookie better. To chop the walnuts I used a steak knife, as they are fairly soft but you could also use a Vitamix or blender, etc. I used Chipits Semi-Sweet Chocolate Chips and for the margarine I used Olivina's but you could also use any other type of margarine (block kind or other spreadable margarines). It took about 12min in the oven and they turned out really well. It seems soft at the 12 min mark but they harden as they cool. One really cool thing about this recipe is the fact that it used baking soda mixed with hot water as an active ingredient, which I've never done before.
