Terry's Peanut Butter Cookies!

Today I decided to make these delicious Peanut Butter Cookies with a recipe from my neighbour Terry as mentioned in a previous post. This recipe turned out really well and I was so happy that it turned out well! The only main modification I had to make to this recipe was to use an additional 1 cup of flour, as I found the dough a bit wet. Since the instructions were fairly sparse, I was fortunate enough to find a similar recipe of hers from cookbook called “Purity Cook Book” that I could compare it with. For the brown sugar I ended up using best brown sugar, but in the past for other recipes that call for brown sugar I’ve also used demerara brown sugar and I find this works as well. The main difference in most brown sugars is the amount of molasses mixed in with white sugar to create a different texture and colour. For the tops of each cookie, I used a fork to press down lightly before putting them in the oven in a criss cross pattern. This recipe made about 36 medium/regular sized cookies at 375F for about 13 minutes. Overall, I was really happy with the results and they were so good that some of the people I gave it to didn’t believe me when I told them I had made them, as they thought it looked and tasted store bought! I wasn’t sure at first if this was a good thing, since I always thought that generally speaking most people thought that home baked goods were better than store bought, but apparently this was a compliment, so yay me (Suite Life on Deck reference or Suite Life of Zack and Cody reference if you’re from the 90s or 2000s haha)! At first, I thought that there was no way these cookies could all be eaten, but literally the day I made them they were almost all gone and eaten to neighbours, friends, and family! Happy baking :)
