Banana Cupcakes with Cream Cheese Frosting!

Today I decided to make these delicious Banana Cupcakes with a Cream Cheese Frosting! As per my Instagram story @bakingwithlauren you can see the whole step-by-step process under ‘Step by Step’ on my main page. I found this recipe really easy to make and I was so happy it turned out so well. In fact, my dad who usually doesn’t like cupcakes loved them and ate 5 of them!!! I know, shocker! Also, everyone else also loved them and ate them immediately, which makes me so happy :) To make the recipe, I followed it pretty much identical except for a few things. For instance, I used vanilla extract instead of vanilla bean paste for the cream cheese frosting and I used two and a half cups of powdered/icing/confectioners sugar for the frosting. Tip: powdered, icing, and confectioners sugar are all the same type of sugar, just with different names. For the main cupcake recipe, I used 1 small to medium sized banana and 1 large banana for the 3/4cup of overripe bananas but you could also use 2 medium bananas if you’d like. For the buttermilk, I made my own using 1 tbsp of lemon juice and ¾ of milk, mixed it, and set it aside for 10-15min. However, you could also buy it at the store if you want to save time or use white vinegar. As for piping, I used a piping bag and used a 1M Wilton icing tip. I then used rainbow sprinkles to add a little touch on top and voila it’s done! Overall, I hope that you enjoyed this review and have a great week baking :)
