Today I decided to make these delicious Blueberry Banana Oatmeal Cookies! Mainly because we had a lot of leftover blueberries and bananas around the house and I was also able to use up the last bit of the oats. I haven’t baked in a little bit since I was sick recently, but it sure feels good to bake again :) Now on to modifications I did when making this recipe. First off, I decided to add blueberries to the recipe since I thought it’d be a nice touch. Approximately ½-3/4 cup of frozen blueberries but you could also use fresh blueberries. We just had a lot of blueberries frozen from previous batches, so I thought I’d use those up first. I also modified the size of the cookies because I didn’t feel like making a whole bunch of cookies but this recipe still ended up making 29 large cookies. They were about a handful or ½ cup in size and I flattened them out slightly with a fork to gain a more desirable cookie shape. As for oven time it took about 17-20min due to the larger cookie size. As for cooling it took about 20ish minutes depending on if you plan on packing them or eating them right away, less if you want to eat them :) Overall, this recipe turned out great and I hope that you have fun baking!
