Banana Blueberry Cookies with a Vanilla Glaze!

Today I decided to make these delicious Banana Blueberry Cookies with a Vanilla Glaze! Now you may think that since last week’s recipe was also a banana blueberry cookie recipe that they are the same recipe. Surprise! It’s actually a totally different recipe and texture. While the previous recipe focused on being soft and chewy oatmeal based cookie, this cookie is more like a soft scone and is topped off with a beautiful vanilla glaze. As for modifications or additional tips, for the banana portion I used 2 medium/large sized mashed bananas. I also didn’t end up using my Kitchenaid mixer or blender, as I found the ingredients to be fairly easy to combine and didn’t think it’d make too much of a difference. I then added 1-1/4cup of fresh blueberries rather than the recommended ¾ cup since I had a lot of leftover blueberries in the fridge and ¾ cup didn’t seem like a proportionate ratio to cookie dough batter. As for the glaze, I used 3 tbsps of 2% milk and 1-2/3cup of icing sugar (aka confectioners/powdered sugar). I then used an icing tool that my dad had bought me previously as a gift, which worked out pretty well, as I used a thin round icing tip to glaze over the cookies. The cookies took about 13-14min in the oven and made 22 medium sized cookies. I also sprinkled some icing sugar on top of a few cookies for a little extra excitement haha. Overall, this recipe turned out really well and if you like blueberries, scones, or cookies, you’ll love this cookie rendition. You could also use other berries or fruit such as strawberries, raspberries, blackberries, or cherries, if you don’t have blueberries on hand, and I’m sure that it would turn out amazing.
