Today I decided to make a delicious recipe of Lemon Blueberry Whoopie Pies with a Lemon Cream Cheese Frosting, along with some blueberries in the middle and a squeeze of lemon juice. In terms of alterations, I kept it fairly similar, however, in terms of frosting I used 1-1/4cup of icing sugar instead of 1-1/2cup. I also baked the whoopie pies for 18min and had a total of 12 cookies, which created 6 pies. I used my Kitchenaid mixer for both the frosting and the whoopie pies. To build them, I spread about a ¼-1/2inch of frosting on one side, and then put one blueberry in the middle and a ring of blueberries on the perimeter. Then I used the lemon cut in half from the lemon zest and squeezed a bit of the lemon juice on top. Then I added a dab of cream cheese frosting and put the other cookie on top. From there, I used a paper towel to cover half of the whoopie pie and sprinkled icing sugar on one side to create a different pattern. For some of the whoopee pies, I did a horizontal or vertical line and others I did a diagonal line. Overall, this recipe turned out fairly well and I was able to use up some of the remaining blueberries around the house. Hope you enjoyed this recipe and have a great week! Happy baking :)
