Apple Crisp Cookie Cups!

Lauren Tang

Today I decided to make these delicious Apple Crisp Cookie Cups since I had some apples lying around the house and wanted to make something innovative. In terms of following the recipe, I didn’t have to make too many alterations. The ones I did make include adding more flour to the cookie cups approximately ½ cup, as I found the dough to be a bit wet. Then I also buttered the muffin tins with margarine, but you could also use olive oil or butter. I then used 4 large Jazz apples, since I didn’t have any Granny Smith Apples at home. I ended up making 12 regular sized cookie cups and 2 jumbo cookie cups, since I didn’t have another regular sized muffin pan. I also used quick oats and baked the cookie cups for 20min in the oven and waited 10min for them to cool, and took them out by running a knife along the edges. As for making them into cookie cups, I used a small glass to compress the middle of the cookies into a cup shape. I didn’t end up using a caramel glaze, as I didn’t have any around or had any time to go to the grocery store or make my own, but I think this would add a nice touch for next time. Overall, this recipe turned out really well and everyone who had them loved them, so I would definitely make them again. Happy baking :)
