Happy belated Canadian Thanksgiving! Here are some cute Mini Pumpkin Pie Cookies that I made with my cousin this past weekend for Thanksgiving dinner. Together we made them from Rosanna Pansino’s cookbook “Baking All Year Round”, which my cousin bought me as a belated birthday gift to inspire my baking blog. These cookies turned out really well and I’m happy with how they turned out. There were only a few modifications that we made such as using egg yolks instead of whole eggs for the egg wash, since we had so many leftover from previous recipes. Also instead of scooping in the pumpkin filling, my cousin suggested that we put it into a ziplock bag and cut off a tip in the corner, so that the filling would stay contained. Along with that we used smaller cookie cutters, as I didn’t have any larger ones at home. The recipe ended up making about 24 mini cookies and for the cutouts we covered them in egg wash and put orange sprinkles on top to bake in the oven. In addition, instead of putting the dough in the fridge for 3-4 hours, we instead put it in the freezer for 40min, as it was beginning to freeze at that point. The cookies ended up taking about 22min to bake rather than 15-18min and for the whipped cream I used this whipped cream maker that I bought a few years ago for the topping. Overall, this recipe turned out fairly well and I would make them again. However, based on feedback I might add a bit more brown sugar to the filling to make it slightly sweeter next time around and fill them a bit more. Also, you can place them fairly close together on the baking sheet because they don’t rise too much.
