Today I decided to share with you all these cute Jack-O’-Lantern Chocolate Cookies with Swiss Buttercream Frosting and Royal Icing that my cousin and I made. As stated in my previous post, my cousin gave me Rosanna Pansino’s cookbook “Baking All Year Round” and we decided to make some of the recipes from it including this one. Now in the book this recipe is called Jack-O’-Lantern Cookie Pops, but since we were short on time we made them into cookies. instead However, I think sometime in the future I may try to make the cookie pops version. As for alterations to the recipe, we used regular flour instead of gluten free flour and best brown sugar instead of light brown sugar. In addition, we put the dough in the freezer for 30min instead of the fridge for 1hr and it worked out just as well. We also ended up using a pumpkin shaped cookie cutter instead of a round cookie cutter to make the cookies, to give a little flair. Also instead of using vegan buttercream frosting we used some of the leftover Swiss Buttercream Frosting from another recipe that we tinted orange with gel food colouring, and coloured Royal Icing green using the same type of food colouring. Tip: I usually use a toothpick to dip into the gel food colouring to add colour to the frosting, but for these two colours I ended up using a fair amount of it and used a frosting spatula to add it in small amounts. As for the faces of the jack-o’-lanterns we used black icing pens we bought from the store and they worked out really well. Also, we left them as single cookies rather than sandwiching them together. In addition, we spread the orange frosting on top of the cookies and then sprinkled orange sprinkles on top. From there, we used the green icing for the stem and iced on the faces using the black icing. Overall, this recipe turned out really well and I would make them again.
