Today I’m going to share with you all these super cute Frankenstein Rice Crispy Treats that my cousin and I made from the cookbook she bought me as a belated birthday gift “Baking All Year Round” by Rosanna Pansino. For this recipe, we have my cousin Kristen as our guest baker/decorator! In terms of alterations to the recipe, we used margarine instead of butter. However, I would say that if you can use butter instead, as it definitely tastes better and improves the texture. Also, make sure to wait a bit before adding the chocolate chips, because otherwise they will have a tendency to melt into the mixture. As for the royal icing, it took a ton of green food colouring to get a dark green despite using gel food colouring but it was worth it in the end, since they looked amazing! However, I would say that you don’t need to use or make the whole amount as prescribed in the book, as it makes more than what you need. Also, for the hair of the Frankenstein monsters my cousin suggested we use chocolate rectangular sprinkles to create a hair-like texture. As for the eyes, we were lucky enough to find them in the baking section at Superstore. In terms of facial expressions for the treats, we ended up using some black icing that we bought from there as well and also added a scar along the neck of each crispy treat to give it a rugged look. Overall, this recipe turned out really well and I would make them again! Since my cousin and I made a bunch of recipes when she came over, she spent most of the time on this one especially with decorating, as I spent most of my time doing the other three recipes. As you can see she did a great job! Also a huge shout out to her for staging and taking the photos of these treats for Halloween, as she wanted to help me out in figuring out different layouts for my blog.
