Mini Pumpkin Cakes!

Happy Halloween! Surprise, an extra post this week just for Halloween! Today I decided to make these cute Mini Pumpkin Cakes with Swiss Buttercream Frosting with my cousin Kristen who also gave me Rosanna Pansino’s cookbook “Baking All Year Round” for my birthday, which this recipe is from. In terms of alterations, I decided not to add the espresso powder, as I didn’t have any at home. However, I think I would add it next time. Note: Since these cakes were made for decorating they were a bit denser than the typical cake I make. This recipe ended up only making 5 halves of cakes for a total of 2 full pumpkins and one leftover half. In terms of frosting, I didn’t have any espresso to add to it and it took a long time to make. However, I would make it again but make sure you don’t over mix it, as it may turn into butter like texture. Since I couldn’t find tootsie rolls at my local grocery store, which was a bit surprising as it’s usually a Halloween candy staple, we ended up using mini Rolos for the pumpkin stems. In terms of frosting the pumpkins, we used gel food colouring and a metal spatula to spread it evenly and in between the layers of the two mini bundt cakes. As for the leaves and vines, we used leftover royal icing from a previous Halloween recipe. We then added jack-o’-lantern faces to them using black icing pens from Superstore. Overall, this recipe turned out really well and I hope that you enjoyed this review! Also, a big shout out to my cousin Kristen for staging and taking the photos of the cakes! As you can see from the picture we used the black board as a backdrop, which I had to hold in the back and shield the glare from the light to get the right picture. We also used brown sugar on the marble board to give it a dirt-like appearance since we didn’t have any materials to make fake grass or add cobwebs or spiders. Happy baking and see you next time!
