Ruby Chocolate Vanilla Cupcakes!

In order to make this I decided to use a vanilla cupcake recipe as a base and then added a drop of liquid red food colouring to give it a pink hue for 6 of the cupcakes and left the other 6 cupcakes as plain vanilla. I then filled the cupcakes ¾ full and baked them for 17min at 350F and used plain white baking tins. This ended up making 12 regular sized cupcakes. In terms of the buttercream frosting, I followed it exactly except I didn’t add the ruby chocolate to the frosting and I added approximately 1-1/2 teaspoons of vanilla extract. I then added about 7 drops of liquid red food colouring to give it a pink hue and mixed it together with a spatula.

I then placed the frosting into a piping bag with a 1M piping tip from the Wilton collection. To fill up the bag with frosting I placed the ends of the bag over a glass cup so that I could just use a spatula to put the frosting inside. I then frosted the cupcakes in a swirl pattern around the whole cupcake top. I then put a piece of ruby chocolate on top of each cupcake. I used Fortnum & Mason’s ruby chocolate for some of the cupcakes and Purdy’s Chocolate for the rest. As you can also get ruby chocolate at Purdy’s, as it was recently brought into Canada. However, the one from Purdy’s also has chopped nuts and dried cherries inside, which makes it a bit chunkier for drizzling on top or for melting in general.

Next time, I would probably buy 2 bars of ruby chocolate from Fortnum & Mason to have enough to bake with and melt some ruby chocolate to drizzle on top of the cupcakes. Also, I would try making truffles or cake or cheesecake next time! Since it is becoming more common in Canada, hopefully I’ll be able to work with ruby chocolate more in the future.
