Today I decided to make these Jumbo Brownie Cookies! These are the perfect size for cookie ice cream sandwiches or for those of you who love chocolate and cookies. In terms of alterations to the recipe, I ended up having to bake them for approximately 22-25min rather than the 12-14min, which I think may be due to the larger size. As mine ended up being even larger than the ones in the picture, partly because I didn’t realize how much they would spread out, as the batter is quite thin. Next time, I would add extra flour to help improve the texture by making it 1 cup or so rather than 2/3 cup. Also, I would put it in the fridge for 15min rather than letting the batter sit for 10min. This recipe ended up making 17 jumbo cookies. In addition, I would also alter the amount of sugar in the recipe by lowering it to 1/2cup and using less chocolate chips. In terms of cooling, I let them sit for about 10-15min and because the dough was quite sticky, make sure to use parchment paper or silicone baking mats. Overall, this recipe turned out a bit sweeter and gooier than expected but fun to make nonetheless. I hope you enjoyed this review and until next time, happy baking :)
