Today I decided to make these soft and delicious Hershey's Kisses Chocolate Surprise Cupcakes with Vanilla Frosting! To make these I followed the recipe down below and the recipe made 12 regular sized cupcakes, 16 mini cupcakes, and 6 heart shaped cupcakes. The regular sized cupcakes was exactly 20 minutes as indicated in the recipe, 10 minutes for the mini cupcakes, and 15 minutes for the heart shaped cupcakes. To make the heart-shaped cupcakes I used a heart shaped silicone mould I bought at Superstore on sale awhile ago during Valentine's Day. As for the cupcake trays, I used white cupcake holders/muffin tins and then filled the empty cavities with water. In terms of mixing, I used my Kitchenaid Mixer, but you could also use a hand-mixer if you don't have one or any other kind of mixer. Before baking the cupcakes, I unwrapped and placed a Hershey's kiss in the middle of each of the regular sized cupcake cavities for an extra special surprise in the middle.
Afterwards, I let the cupcakes cool for 10 minutes on a cooling rack and then moved on to making the vanilla frosting. To make the frosting, I used 3 tablespoons of milk rather than 4 and 3 cups of icing sugar rather than 4 cups. As a result, this made the frosting a bit softer, but was the perfect sweetness to balance off the chocolate kisses and chocolate cupcake. As for the shortening, I ended up using an all-vegetable shortening. I also used an icing bag and icing tip for the vanilla icing. To do this, I first placed the icing bag over the edge of a tall glass and then filled it with icing using a spatula. The tip I used was thinner than I normally would but since I wanted to use it for both the regular sized and mini cupcakes, it worked out a lot better this way. I then placed an unwrapped Hershey's kiss on top of the cupcakes and put chocolate sprinkles on top and voila it's done!
Fortunately, this cupcake not only looks good, but it tastes delicious too! As my dad tried one and he normally doesn't like cupcakes and he ended up having two more! He said they're super soft, moist, and he even thought it was from a cake mix! However, I'm not sure if the last one is that much of a compliment, as generally homemade cupcakes taste better, but he says it was, since he likes Duncan Hines cupcakes haha.
