As our days of quarantine continue, I decided to make these soft and chewy oatmeal cookies! Since in previous posts I've made oatmeal cookies with raisins, nuts, chocolate chips, etc. I decided to opt for the original oatmeal cookie this time around. However, I did make some with raisins as my dad really wanted oatmeal raisin cookies haha. Side note: My dad really liked these cookies and said they're one of his favourite recipes I've done! The best part about this recipe is it that it uses few ingredients and is quick and easy to make! This recipe made 30 regular sized cookies. In terms of modifications, I used quick oats rather than old-fashioned oats, as I didn't have any on hand. I also used best brown sugar instead of light brown sugar for the same reason, and it worked out great! In terms of mixing, I used my Kitchenaid Mixer, but you can also use a hand mixer if you don't have one at home. Also to make it easier cut the butter into small pieces and make sure the butter is softened to room temperature before hand for at least twenty minutes. In terms of baking it took about 22 minutes for the first batch as they were a bit larger and 18 minutes for the second batch. As for the remaining amount that I added raisins to, I added about 3/4 cup of Thompson raisins. Roll the cookies in your palm in the shape of a golf ball and place them on to a baking sheet with either parchment paper or a silicone-baking mat. As for cooling, let it cool for at least 10 minutes and store in a container on the counter. If they get a bit dry over time, then add a slice of bread to the container but not directly on top. As a finishing touch, I melted some chocolate chips to drizzle on top as I found it added a little extra something special! Overall, this recipe turned out really well and I'll be making some more quick and easy recipes for baking with common household ingredients over the next little while.
