Today I decided to make these cute Mini Banana Foster Cheesecakes. A great way to use some of your ripe bananas for a baking dessert other than banana bread. Some modifications I did for this recipe include using a muffin pan instead of a mini cheesecake pan, as I didn't have one on hand. However, I would recommend using cupcake liners to make sure the mixture doesn't stick to the pan. Also, for the graham crackers I bought graham crumbs instead, so that I wouldn't have to use a food processor to do this. I also used best brown sugar instead of light brown sugar, since I didn't have light brown sugar at home. Also, for the topping I used 1tsp of vanilla extract instead of bourbon, however, you could either omit this completely or use your preferred alcohol such as rum at home instead. In terms of baking it took about 24min rather than 18min. For this recipe, it was difficult to determine when they were baked, as cheesecake has a slight jiggle in the middle even when it's done and should have a light browning around the edges. Also, once you have assembled your cheesecakes together, feel free to add your favourite toppings such as whipped cream, vanilla ice-cream, or fresh banana slices on top.
