Apple Cinnamon Oatmeal Cookies!

Today I decided to make these soft and delicious Apple Cinnamon Oatmeal Cookies, which are perfect for an afternoon tea or on the go breakfast. One of my favourite things about this recipe is how quick and easy it is to whip up in the kitchen and also how when they bake in the oven it makes the kitchen smell like an apple pie/cookie jar!


In terms of modifications, I followed it fairly closely with only substituting a few ingredients such as instant oats instead of old-fashioned oats. This will only affect the texture slightly, as the instant oats will make the cookies softer, whereas the old-fashioned oats will give them a more distinct classic oatmeal cookie taste. Also, I used best brown sugar instead of light brown sugar simply because it was what I had at home at the time. In addition, I used one extra-large Envy apple instead of Granny Smith apples, which work just as well, but will slightly change the overall texture.


In total, the recipe made 14 regular sized cookies and took about 18 minutes for the first batch and 15 minutes for the second batch. If you wanted to mix it up a bit, you could also add chopped nuts to the mixture or drizzle either a vanilla/caramel glaze on top. Overall, I hope you enjoyed this review and have fun baking :)
