Today I decided to make these delicious Apple Cinnamon Scones with a Caramel Glaze. This was the first time I've used caramel extract and I was pleasantly surprised. Not only did it add a new nuance to glaze's flavour, but it also enhanced the chopped apple in the scone.
In terms of alterations, I followed the recipe fairly closely, however, I did use mini Rockit apples for the chopped apple portion, however, other good options include Granny Smith or Honeycrisp. Also, since I didn't have heavy whipping cream, I ended up using whipped cream and then let it melt in the mixture, which fortunately worked out well.
Another option you could use is buttermilk, which you can easily make using 1 tbsp of lemon juice or white vinegar mixed with 1 cup of milk and let it sit for 15 minutes before adding to the mixture. One thing I did forget to do before baking was to brush the scones with heavy whipping cream, which I think would've made a difference in the appearance and texture for the surface of the scone, so make sure not to skip this step.
If you really like the caramel flavour, you could substitute the vanilla extract in the scone for caramel extract. As for the glaze, I used 2 tbsps of milk, but if you would like a slightly thicker glaze, I would opt for 1-1.5tbsps instead. As for baking it took 22 minutes, but 20 minutes would also work for a fluffier texture. Overall, these scones turned out delicious despite all of the alterations and I hope you enjoy making them too! Happy baking :)
