Today I decided to make this delicious Apple Strudel with Whipped Cream Icing. The reason why I ended up using two recipes for this dish was simply because I thought I had bought puff pastry, but then realized half way through making the filling that I actually had phyllo pastry instead. Thankfully, the fillings were fairly similar for both an apple strudel and apple turnover recipe, so I simply switched recipes and have a new combination! In terms of modifications, for the filling I used the butter, apple, brown sugar, cinnamon, and salt ratio from 'Natasha's Kitchen' recipe. However, I then added 1tbsp of olive oil, nutmeg, walnut, and raisin ratio from 'The Mediterranean Dish's' recipe. I also ended up baking at 375F since I would be using the phyllo pastry instead of puff pastry, and layered 10 sheets of phyllo pastry before putting the apple filling on top.
In terms of folding the Apple Strudel, I ended up folding it with the longer sides over the filling to make a shorter strudel rather than a long thin strudel. I wasn't sure if this would work out afterwards, but fortunately everything turned out well and all I needed was to brush the top and edges with olive oil with a pastry brush and it was ready to go into the oven. The strudel came out with a beautiful golden brown colour at exactly 35 minutes, which I was pleasantly surprised to find out, as recipes are unpredictable sometimes.
After letting it cool, I then made the glaze from 'Natasha's Kitchen' recipe using whipped cream and icing sugar. I literally used whipped cream because we didn't have any heavy whipping cream at home, when in doubt improvise with what you have! I then drizzled the glaze diagonally across the strudel and sprinkled some raisins and chopped walnuts on top and voila your very own Apple Strudel! You can also add ice cream, whipped cream, or any of your other desired toppings. As for storing, I put it in a container in the fridge due to the whipped cream in the glaze, as I didn't want it to mold. Overall, the strudel was a success much to my surprise and I hope you enjoyed this review. Happy baking :)
