Apple Tarte Tatin!

Today I decided to take a chance and try yet another French dessert, namely an Apple Tarte Tatin. Unfortunately, once again this recipe didn't turn out quite like I had hoped for, however, this time I think it was partially due to the apples I used. As I used mini apples, which were a bit sour and small, so for next time I would use regular-sized apples that are sweet like Gala or Honey Crisp. Other than that, it ended up being a good recipe. The caramel process was easier than expected, but it did take a bit of time, as did cutting and peeling the apples. Since I used mini apples, I had to use about 25 mini apples, which I think contributed to the amount of time it took.


As for the puff pastry, I used the frozen kind that splits into two blocks by 'Tenderflake,' which turned out really well! My parents really liked the taste of the pastry dough, so I would highly recommend using it, if you don't feel like making your own. Also, keep in mind that it takes time for the dough to defrost, so allot 3-4 hours for it sit on the countertop prior to making the recipe. Alternatively, what I ended up doing was letting it sit for a bit on the counter and then heating it in the microwave in a bowl for 30 seconds and then again. However, if you do this I would do it in 15 second or 20 second increments, as it was a bit buttery after the second time. So, 30 sec and 15 sec would have worked perfectly, but I would definitely say that you should experiment with this.


Since it was a bit buttery, I decided to sprinkle some flour on top and roll it out, which fortunately worked out and I was able to cut a circle around the pan and use a fork to poke the holes in to the dough. Another tip would be to not use too much of the leftover caramel sauce on top of the apples after you place them around the pan. As this will cause it to get too sticky and make it difficult to take out of the pan. Overall, I would say give this recipe a try and see how yours goes, hopefully my tips will help you prevent making the same mistakes and have fun baking! :)
