Banana Bread Ice-Cream Sandwich Cookies!

Hello Summer! Today I decided to make these delicious Banana Bread Ice-Cream Sandwich Cookies due to the recent heatwave in BC reaching up to 46C! Since it didn't seem quite right to post a typical dessert, ice-cream came to the rescue and answered Vancouver's call (unless the AC showed up first, then it would probably be enjoyed but moved to second place)! Another mix I added to the idea of ice-cream sandwich cookies was to make them banana bread cookies. Part of this was because it was a cool twist on a classic and mostly it was because we had leftover ripe bananas that were ripening faster than we could eat them due to the extreme heat.


As for the recipe, I couldn't find an exact banana bread ice-cream sandwich cookie recipe per se that I really liked. So, I decided to combine my favourite segments from the recipe down below and then replace the frosting with a delicious scoop of vanilla ice-cream :) How does that sound? Perfect with a cold glass of milk, you say? I think so! Haha okay so that was a bit over the top, but I'm really excited to try out this recipe and I hope you like it too.


In terms of modifications, I would say that you only need 1/4 cup of sugar + 1/2 tsp of cinnamon to roll the cookies in before baking. In total, the recipe made 14 cookies, which equals 7 ice-cream sandwiches of absolute perfection (*mwah!). As for the ice-cream, once the cookies cooled down, I simply scooped about 1/4 cup on the back side of one cookie and then put another cookie on top and pushed it down a little bit to make it stick.
