Today I decided to make this delicious Berry Cheesecake Tart, as I had some leftover phyllo (filo) pastry at home and thought this would be a refreshing spring dessert. To make this, I ended up using Philadelphia cream cheese instead of vegan cream cheese, as I didn't have any at home at the moment. However, the texture was unaffected fortunately, so this works as well. I also ended up using a combination of blueberries and strawberries, as I didn't have any raspberries, and you could also swap it out for more blueberries or blackberries, or any other kind of fruit that you happen to have on hand. In terms of baking, I did end up having to bake it for 35min at 320F, instead of 30min. However, next time I think I would bake it longer at 40min or so, as I found the mixture a bit watery in the middle. Despite this, I think the recipe turned out well, as the cheesecake portion didn't include any eggs. Anyways, I hope you enjoyed this review and let me know what you'd like to see next.
