Today I decided to make these delicious Blueberry Muffin Cookies drizzled with a lemon glaze! Perfect for an afternoon tea or snack and even better with a cup of coffee or tea to start off your day. Making these cookies was fairly straight forward with only a few modifications such as excluding the lemon zest, which was purely due to the fact that I didn't have a lemon on hand. How was I able to include the lemon juice you ask? Very simple, I had some lemon juice that I previously had from a previous recipe...okay so not as exciting as the lead up, but hey it worked out regardless! The recipe made 18 cookies in total and took approximately 20 minutes to bake at 350F. Overall, this recipe was super cute and a little messy (given that I forgot to add the milk in at the right time, hence, why they are little purple...okay a lot...but they still taste great! It adds character, right?) but a lot of fun to make! Happy baking and see you next week :)
