Recently, a friend of ours gave us a bunch of blueberries and so I thought this would be the perfect time to make a Blueberry Pie! A friend of ours also recently made a blueberry pie which my dad loved, so I decided to ask her for a recipe, since I haven't actually made a blueberry pie funnily enough, and she was happy to send it along.
The next thing, I then went to search for was a pie crust recipe, since the recipe she gave me called for bought pie crust, but I thought I'd try my hand at making homemade crust, as I wanted to gain more experience in that area. Fortunately, one of my friends has been recently making a lot of pies this summer due to quarantine and was generous enough to send me the link to her favourite pie crust that she's made this summer.
I was also inspired after reading Kerry Winfrey's recent novel, "Not Like the Movies," where the protagonist is an avid baker and loves to bake pies. As for the pie crust design, I couldn't decide on what pattern to do and fortunately, my cousin was very helpful and sent me a few of her favourites, and I decided to make a twist on a few of the ones she sent me to come up with a heart shaped pie crust. So, without a further ado, here is my spin on a blueberry pie!
In terms of modifications, there were only a few tweaks here and there that I would recommend for the two recipes. One of those would be to increase the amount of cornstarch to the pie filling, as it turned out a bit more liquid-y than I would have liked, however, this is really up to you. You could also substitute the cornstarch for arrowroot powder, if you're allergic to cornstarch like me, as I find it works really well as a combining agent.
Also, I would recommend adding a bit more water to the pie crust dough and while I did make the full amount, I ended up using the whole amount in order to have enough for both the top and bottom. Also, for some reason when I made the dough one half of it turned out pretty than the other and I ended up putting the other half in the freezer while I rolled out the other half to firm up a bit more. This also contributed to part of the reason, as to why I decided to use heart-shaped cookie cutters to create the crust on top.
Fortunately, the crust turned out fantastic once baked, as did the overall taste, and my dad said it was his favourite pie crust yet! Overall, this recipe turned out really well and I hope you enjoyed this review. Happy baking and I hope you are all having a great summer :)
