Today I decided to make these cute and delicious Cherry Hand Pies. I thought it'd be fun to make something using cherries since they're in season and we had a bunch of them in the fridge. Typically, I would incorporate them into a bread, bar, or cookie, but I thought since I haven't made many pies this year so far, I'd give it a try. In terms of modifications, I ended up making 20 hand pies for 17 minutes in two different pie shapes and on three baking sheets with silicone baking mats. The reason why I decided to make two different shapes was because I found a mini pie maker Wilton kit that I bought a while ago from Dollarama that had both rectangular and circular pie shapes. Unfortunately, the pie makers weren't as easy to use as was stated, but they did help with cutting out circles and rectangular shaped pie dough. As for the filling, I ended up putting approximately 1/2 tbsp of cherry filling in the center of the dough and then using the egg wash around the edges. From there, I used a fork to print around the edges of the pie with another circle/rectangle on top of the dough with the filling. I also brushed egg wash on top of each hand pie and sprinkled sugar on top. However, next time I would sprinkle coarse sugar to give it a little extra something. Overall, this recipe turned out really well and I'm so glad I found another way to use cherries. Happy baking :)
