Today I decided to make these delicious Chunky Monkey Cookies! Not only do they have oatmeal and chocolate chips, but they also have pecans to boot! There were a few modifications that I needed to make, which was partly because I decided to use a bit more banana than the recipe called for, but I was able to modify it enough that it turned out well regardless! So, for the banana portion it called for 3 bananas (1 cup) but I really only needed 2 bananas and a little extra.
However, I didn't know what to do with the rest of the banana, so I ended up using the whole third banana, which explains why I ended up having to add approximately 1/2 cup of flour, as the mixture was a bit gooey. I also substituted the walnuts for pecans, as I ran out of them at home. However, I do think that walnuts would be a good substitution, to create the full chunky monkey cookie experience haha.
I also ended up using rolled oats, mainly because at this point, I had already gone up and downstairs enough times that unless I absolutely had to, I was going to stick with what was upstairs haha. Fortunately, all of these changes didn't affect the integrity of the cookies and I ended up making 32 regular sized cookies! The more the merrier they say, right? In terms of baking time, it did take a bit longer than expected at 350F for 18min and cooling time for 10min.
