Cinnamon Rolls with a Cream Cheese Frosting!

Today I decided to make these delicious Cinnamon Rolls with a Cream Cheese Frosting. Now this recipe has quite the story to go along with it. So, yesterday I tried making these rolls, but unfortunately it didn't work out and didn't become dough-like. This was highly unusual for me, as I usually follow these recipes to a tee, so I decided to re-read the recipe to look for clues, as well as the comment section and watching the video. Next day, I tried again because I wasn't going to give up. Again, it didn't work out at the dough stage, then I realized it was probably due to the fact that I used active dry yeast rather than instant yeast.


After doing a bit of research I then decided to heat up approximately 1/4 cup of warm milk to 110-115F and add 0.5 tsp of active dry yeast. Apparently, you need to multiply 1.25 by the amount that of instant yeast needed to get the amount of active dry yeast you need. I then added a sprinkle of sugar on top after letting the yeast sit in the milk for about 10 minutes, so that it had time to bloom. Since active dry yeast takes more time to rise than instant yeast, hence the name. Moral of the story try using the right yeast for the corresponding recipe and you won't have as many issues. Fortunately, after adding the additional yeast mixture the dough finally formed. Yay!


I then let the dough rise for 1-1/2hrs before rolling out the dough. Since I didn't have the time to wait for the second rise to happen at the time, I put them in the fridge for the time being. Once I had the time, I then took the rolls out of the fridge and let them rise for 45 minutes and popped them in the oven at 350F for 25 minutes. Once taking them out of the oven, I then let them cool for 8 minutes and then spread the cream cheese frosting on top. This resulted in delicious rolls and I would make them again. However, next time I may make a different recipe to try out another alternative. Overall, I'm curious to see how these would turn out with instant yeast from the beginning, but I'm willing to try out a new recipe as well.
