Cookie Monster Cupcakes!

Recently, I saw an Instagram photo of these Cookie Monster Cupcakes by @cakes.in.bloom (July 1st, 2020), which inspired me to make my own version of these cupcakes. Since there was no associated recipe, I then decided to use chocolate chip cupcakes as the basis of the dessert since the cookie monster in 'Sesame Street' loves chocolate chip cookies. In terms of the chocolate chip cupcakes there weren't many alterations I needed to make. However, some include I only had 1/2 cup of 2% left in the fridge, so to substitute I used whipped cream leftover in the fridge, which I melted slightly to a liquid state to make up for the other 1/2 cup of milk. However, I would recommend using 2% or 1% milk if you have it on hand instead. As for baking, it took about 25min in the oven to bake the cupcakes all the way through rather than 15-18min. I then let it cool for about 15-20min and the recipe made 19 cupcakes rather than 24.


I then decided to make vanilla buttercream frosting, as it would make it easier to use food colouring to get the desired colours (bright blue and light brown). Since I had more than 12 cupcakes, I decided to double the recipe and use 2 cups of unsalted butter, 3 cups of icing sugar, 1.5tbsps of vanilla extract, and 7 tbsps of whipping cream (since I didn't have heavy cream). I then split the frosting between two bowls and I used blue liquid food colouring to achieve the desired blue and I was really happy with how it turned out. I then added cocoa powder to the other half of the frosting to make into a light brown. As for frosting the cupcakes I did a circular swirl around the cupcake from the middle using a reusable icing bag, which turned out way better than I thought it would. Especially since the colour dye didn't taint the colour of the icing bag like I thought it would. I originally got it as a present from my parents, which they said they bought from Winners, so I would check it out there or at Homesense or a similar type store.


After frosting the cupcakes, I then sprinkled mini chocolate chips on top of the light brown frosted cupcakes to make them resemble chocolate chip cupcakes. As for the blue frosted cupcakes, I added 2 candied eyes that I bought from Superstore. Next time, I think I would either make smaller cupcakes to make the eyes look bigger or use larger sized candied eyes. I then used some chocolate chip cookies we had and broke them in half and used it to make it seem as though the cookie monster's mouth was full with a cookie. I did experiment on one of the cupcakes to use black icing gel to make a mouth, but it didn't look quite right, so I decided to stick with just the cookie for the rest of the cupcakes. As for how much frosting was used it only ended up frosting 17 cupcakes instead of all 19, even though it said it would frost 24 cupcakes, however, I think this was because I used a lot less icing sugar, which would attribute to the overall volume of frosting. Overall, this recipe was a lot of fun and it's been nice to make a dessert involving decorating, as I usually don't have the time or the supplies to do so.
