Gingerbread Cheesecake Cookies!

Today I decided to make a festive holiday dessert with these Gingerbread Cheesecake Cookies! I love how they combine two distinct flavours and desserts all into one! Making these cookies wasn't too difficult and there weren't many modifications that I needed to make. Some alterations I made include using pumpkin pie spice instead of allspice. I also grated fresh ginger with a fine grater instead of using ground ginger, as I always find this elevates the flavours a lot more in the recipe. As for the unsulphured molasses, I used fancy molasses, which seemed to incorporate well with the other flavours. This recipe made 14 large cookies and took approximately 16min to bake at 350F. I let them cool for about 10min before serving and to let the cheesecake center settle. Overall, I really enjoyed this recipe and I hope you do too! Happy holiday baking :)



Peppermint Meltaway Cookies!

Today I made these minty fresh Peppermint Meltaway Cookies! These are perfect with a cold glass of milk or hot cup of hot cocoa. I decided to make them after I had some leftover candy canes and thought what better what to incorporate them other than a cookie! There weren't too many substitutions that I had to make, but I did end up using arrowroot powder instead of cornstarch, simply due to the fact that I didn't have any on hand. I also ended up using approximately 6 mini candy canes for the topping that I crushed in a bag and I used 3 drops of red food colouring to get the right pink colour. I also added about an extra 1/8 cup of icing sugar to the frosting. This recipe ended up making 18 cookies and took about 14 min at 350F. Overall, I had a lot of fun making this recipe and I hope you have fun doing holiday baking :)



Chocolate-Dipped Peppermint Chocolate Sugar Cookies!

Merry Christmas Eve! Today I decided to make these festive Chocolate-Dipped Peppermint Chocolate Sugar Cookies! I loved how easy they were to make and how much fun it was! I was also able to use my left-over candy canes. There weren't many substitutions that I had to make, however, I did end up baking them for about 15min as they were slightly larger. I let them cool for about 10min and this recipe made about 20 cookies in total. For the chocolate dip, I melted about 1 cup of semi-sweet chocolate chips with 1 tbsp of Crisco in the microwave and made sure to scrape the edge against the bowl, so that it wouldn't drip. I let them harden on a cooling rack with parchment paper underneath it. I sprinkled candy canes on top that I had crushed using a spatula in a ziplock bag. Overall, the recipe turned out really well and I hope you all have a wonderful holiday season! Happy baking and Merry Christmas!
