Today I decided to make these delicious Fall-based Gingerbread Cheesecake Cookies! Perfect with a cold glass of milk or warm cup of tea :) These were quick and easy to make and I loved how it didn't require too much cream cheese, purely because I didn't have anymore left at home haha. These cookies remind me a lot of the soft ginger cookies I made in a previous post, but I love how they added the different spices to the sugar coating as well. The centre was soft and fluffy, which is everything cheesecake should be! This recipe made 18 regular-sized cookies in total and took about 14 minutes to bake at 350F.
